I take the foam, cut it into the basic shape I need and glue it with hot glue. Note: glue towards the center so you don't have to carve through it later. This pink foam is quite easy to carve though messy and brittle. I carve everything individually and hot glue it together. Bearing in mind that the foam is brittle you're going to want to cut up a lot of tissue paper and make a solution of water and white glue. Working in small areas at a time brush the mixture onto the foam and add the paper to build a skin. Let this dry THOROUGHLY and reapply as many layers as you like and you'll find that It's much tougher now.

I glued a chunk of leftover foam to the face and sculpted the clay around it. I let it dry over night and filled in the cracks like usual.

A few more details added, eyebrows, jowls, lower jaw and neck. Ears came last because I didn't want them to break while I made all the other parts.

I forgot to take pictures of the counterbalance, the head is much heavier than the rest of the sculpture so you're going to need a counterbalance. I cut a hole in his hindquarters and put a chunk of metal inside and glued it in place. I chose to paint him white and brown and sponged on a bit of black to make him whats known as a Brindle pattern.
Side Note: Pit bulls get a bad reputation as vicious or mindless but they are just like an other breed of dog, treat them with love and respect and they're great dogs. I don't have one myself, I have a tarantula named Rosalyn :)
