Pink Beetroot & Mint Soup

A creamy beetroot soup with mint, yogurt, green chilis and a touch of wasabi!

Tom hates soup so I've been making single serving recipes for myself, using up any fresh veg we have in the house. This was really tasty.

You Will Need (8 things)

  • 250 g Natural Yogurt
  • 2 small Beetroot s
  • 2 Small Green Chili s (seeds removed)
  • Handful of Mint Leaves
  • Juice from half a Lime
  • 1 tsp Wasabi
  • Salt and pepper
  • Sesame Seeds to serve

Steps (5 steps, 5 minutes)

    Chop the beetroot and place in a blender with the mint leaves and chilli. Squeeze the lime juice on top.

    Mix together the wasabi and yogurt and add to the blender.

    Blend until smooth.

    Pour into a small sauce pan and heat. Season with salt and pepper.

    Serve with a sprinkling of sesame seeds on top and some fresh mint leaves.
