Pineapple Mango Smoothie

As a result of both my desire for fruit and wish to keep it fresh, I have turned to smoothies and the best part about it is that I can cut and freeze the fruit myself then use at my own discretion.

This smoothie has a great tropical taste, a lot of spring time freshness and a really good texture (from the flax seeds). It instantly perks up the rainy spring days. Also, if you wanted to add a little more tropical flavor and make it a little more pina colada you could add some cream of coconut and maybe some rum too.

One of the many great things that the arrival of Spring has brought is the abundance of fresh fruits in the marketplace. I try to always to eat in season and local if I can get it (yes I’m one of those), so Spring is a big time for me. I tend to buy up every bit of produce I can get my hands on and just hope for the best. There are a lot of flaws with this plan, mainly that the fruits tend to spoil before I get a chance to enjoy them.

Some of these portions may be off, I had to guestimate based on how I normally make it, but it’s about a handful each of the frozen fruits.
