To make crushed pineapple blend canned pineapple with a blender.
To make crushed pineapple blend canned pineapple with a blender.
Heat oven 175 degrees. Combine all base ingredients together. Press into a tin. Bake for 10 mins.
Combine the cream cheese & egg yolks.
Add condensed milk. Stir through.
Add the pineapple. Stir through.
Fold in 3/4 cup of coconut.
Pour over the base.
Top with remaining coconut. Bake for 45 mins.
Add cherries on top. Allow to cool. Refrigerate overnight.
Cut & serve.
