Pico de gallo means 'peck of the rooster' in Spanish and the name refers to the fresh ingredients. It works great as a dip for chips and is my favorite as a condiment for homemade chili. This would be an excellent, easy-to-make dip for holiday parties. A few small jars of this would make excellent last minute Holiday gifts. This fresh dip will keep around 3 days if kept refrigerated. You may need 6-8 tomatoes.

Combine all ingredients and fold to mix. You can eat this right away, but is best when allowed to rest in the refrigerator for at least 1 hour.
Ingredients can be mix in any ratio to your tastes. Any infinite substitutions can be used.
