Pesto, Olive & Cheese Quick Bread
Seedy no-yeast quick bread with red pesto, olives, capers, cheddar cheese and herbs!

It was Bread Week on the Great British Bake Off last week and their challenge was to make a quick bread with no yeast. I decided to top mine with pesto, olives, capers, seeds and cheese - it was so tasty, like a thick pizza bread.

You Will Need (13 things)
- 400 ml Soy Milk
- 500 g Bread Flour
- 1 tsp Baking Soda
- 1 tsp Salt
- 4 tbsp Mixed Seeds
- 2 tbsp Lemon Juice
- 200 g Cheddar Cheese
- 50 g Olives plus a few extra to top
- 50 g Capers
- Dried Rosemary
- Sea Salt
- Pepper
- 100 g Red Pesto
Steps (9 steps, 35 minutes)

Whisk together the soy milk and lemon juice to create buttermilk and leave to stand for a few minutes.

Place the flour, baking soda, salt and mixed seeds in your bread maker or you can do this by hand in a bowl.

Grate in half of the cheese and add the olives and capers.

Knead the bread, or leave your bread machine to do the work, until you form a thick dough.

Shape the dough into a loaf and score two cuts along the top.

Bake at 180'C for 20 minutes and then briefly remove from the oven.

Top with red pesto, making sure to get lots in the slits.

Grate the remaining cheese on top and the remaining olives and sprinkle with rosemary, sea salt, pepper and a few more mixed seeds.

Bake for a further 12 minutes and enjoy!
