Percy's Tea Loaf
A fruit loaf infused with Percy's alcoholic ice tea and drizzled with lemon icing

Perfectly halfway in between a drizzle cake and a tea bread, this fruity loaf is soaked with alcoholic ice tea from Percy's Tea and drizzled with a sticky lemon icing.

You Will Need (11 things)
- 250 g Dried Fruit
- 50 g Sugar
- Percy's Tea Black Alcoholic Ice Tea
- 1 Egg
- 250 g Plain Flour
- 3 tsp Baking Powder
- 1 Lemon

For the drizzle
- 100 g Icing Sugar
- 1 Lemon
- Water
Steps (11 steps, 45 minutes)

Place the dried fruit in a bowl with the sugar, grate in the zest from an lemon and then squeeze in the juice from the lemon.

Pour in a bottle of Percy's Tea and leave to soak overnight.

Whisk in the egg.

Add the plain flour and baking powder.

Mix to form a thick dough.

Place the dough in a greased bread tin.

Bake at 180'C for 50 minutes until golden.

Leave to cool before turning out of the tin.

Place the icing sugar in a bowl and grate in the zest from a lemon.

Squeeze in the juice and stir to combine. Add a little water if the icing isn't running enough.

Drizzle the icing over the loaf and serve.
