You Will Need (13 things)

1 stick unsalted butter

2/3 cup raw cane sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon lemon zest (finely grated)

1/2 cup thick yogurt

1 teaspoon baking powder

1 cup plain flour

1/4 teaspoon salt

6-8 fresh ripe peaches

1/2 cup grated coconut (optional)

1-2 tablespoon ice cold butter, cut into small cubes

1/3 cup raw cane sugar
Steps (5 steps, 90 minutes)

Preheat the oven to 350 Fahrenheit;
Grease a baking dish 13x9 inches -

Make the batter: Cut butter into small dice. Keep 2 tablespoons in the fridge until ready, and beat the rest with 2/3 cup sugar until creamy. Whisk in the eggs one by one and add the vanilla extract and the lemon zest. Blend in the yogurt until fully incorporated. Mix baking powder with flour and salt. Gently fold 1/2 cup at the time into the egg-butter mixture until you have a smooth batter.

Prepare the peaches: Wash the peaches gently and leave the skin on. Cut in half, remove pit and cut each half into four parts.

Mix the coconut into the batter (optional) and pour batter into the greased baking dish. Arrange peaches on top in an even pattern. Divide ice cold butter on top and sprinkle all over with 1/3 cup raw cane sugar.

Bake in the preheated oven for about 40 minutes, or until a metal skewer stuck in the middle of the cake comes out clean.
