Fully combine all of your peach filling ingredients in a bowl and all of your oat topping ingredients in a separate bowl.
In a baking dish, spread out all of your peach filling evenly and coat with the crumble topping. Bake in the oven for approximately 25 minutes or until the crumble on top has browned.
Allow the crumble to cool to your preference. This can be served cold or warm. When ready to serve, scoop even portions into small mason jars and top with a scoop of vanilla ice cream. Drizzle honey on the top and garnish with a sprig of mint!
