My mom asked me to bring some cupcakes for our family 4th cookout, and when I make cupcakes I like to go all out, so I browsed the baking isle and managed to throw this together. Now I'm trying to resist eating them until the BBQ tomorrow :/
My mom asked me to bring some cupcakes for our family 4th cookout, and when I make cupcakes I like to go all out, so I browsed the baking isle and managed to throw this together. Now I'm trying to resist eating them until the BBQ tomorrow :/
Follow directions on the cake mix to prepare your batter, and add blue food coloring until you get the shade you want. Then pour into a muffin pan and bake as directed.
While your cupcakes are baking, put frosting into a bowl and mix in red food coloring.
While you're at it, mix a little bit of blue food coloring with some sugar. I made too much here.
Make your pudding mix.
Once your cupcakes are done and cooled, use a spoon and carefully cut/spoon out the center of the cupcakes.
Spoon a bit of pudding into each cupcake
Add frosting. I personally put mine in a ziplock baggie and cut the corner and squirted it on.
Sprinkle some of your colored sugar on.
Melt your white chocolate chips. I did mine in a pan on a stove, I recommend adding a little veggie oil to keep it from burning.
For this style of cupcake, drizzle the white chocolate over the cupcakes, then take a strawberry and dip it in the white chocolate, then in the blue sugar.
For these, I sliced the strawberries (I like it because the inside of the strawberry looks like an exploding firework), put a little blob of white chocolate on it, and sprinkle some of the colored sugar over it. I also put a couple white chocolate chips around the strawberry slice.
The end result should be something like this!
