Fry the aubergine with a little olive oil in a frying pan.
Season with salt and pepper and add the chilli flakes and dried herbs.
When the aubergine begins to brown, add the garlic and capers.
Chop the tomatoes and add to the aubergine.
Add the balsamic vinegar and red wine vinegar.
Sprinkle in the chives.
Add the cooked pasta.
Mix together.
Divide into two bowls.
Before you begin, bring a pan of water to the boil and begin cooking the pasta. Chop the aubergine and tomatoes into small cubes.
Sprinkle with parmesan and serve with a few fresh basil leaves.
