You will need

½ cup Superfine Sugar Grated zest of 1 Lime ½ cup Passion Fruit pulp (about 6 passion fruit) 3/10 cup Lime Juice 2 tbsp Tequila 1 tbsp Cointreau

When removing the seeds from the passion fruit, be sure not to lose any of the delicious juice. Makes 4 Preparation time: 15 minutes Freezing time: 6 hours

Instructions

1. Place the sugar and lime zest in a small saucepan with 1 cup (250 ml) water. Slowly bring to a boil, allowing the sugar to dissolve. Let bubble for 5 minutes, then remove from the heat.

2. Stir in the remaining ingredients and pour into four popsicle molds.

3. Place the molds in the freezer. After 3 hours give each one a gentle stir to distribute the passion fruit seeds and insert the popsicle sticks. Return to the freezer for an additional 3 hours, until frozen solid.
