Home Farm Oxtail soup

This soup is thick & hearty.

Great for a cold winters day.

You can add any type of veg you like or have at home.

You Will Need (7 things)

  • Oxtail
  • Carrot(s)
  • 2 tsp Tomato Paste
  • Leeks
  • Turnip
  • Potatoes
  • 2 1/2 pints Beef Stock

Steps (7 steps, 270 minutes)

    place the ox tail in a pan of water.

    Bring to the boil & simmer for 3 1/2 hours or so.

    wash & soak the scotch broth mixture.

    Once the ox tail has been cooked.

    Remove the oxtail from the pot.

    Allow to cool.

    Add the scotch broth mix & veg to the stock.

    Add a the beef stock also.

    Cook for 20 mins or so until the broth mixture is softened.

    Add the potatoes & tomato purée.

    Stir through & cook out til the potatoes are cooked.

    Shred the oxtail meat.

    Add to the pot & stir through.

    Serve.
