This is quite like a Madeira cake. You can use lemon instead of orange to flavour the cake. This tastes good either hot as a desert or cold as a snack/ treat.
This is quite like a Madeira cake. You can use lemon instead of orange to flavour the cake. This tastes good either hot as a desert or cold as a snack/ treat.
Heat oven 160/300/ gas 3. Cream butter & sugar until pale.
Add eggs one at a time. Beat well between each addition.
Add half the flour, baking powder & salt.
Mix in the half the milk.
Add the remaining flour mixture. Stir to combine.
Add remaining milk. Stir to combine.
Add orange zest & juice. Combine.
Cook for 1 hr 20 mins. Until cooked through.
Remove the cake from oven. Leave it to cool in the tin Make the syrup... Place all syrup ingredients in a bowl & microwave for 1-2 mins until sugar has dissolved.
Poke holes in the cake using a skewer. Pour the syrup over the cake & let soak in.
when the cake is cold, make up the icing with a little water. Drizzle over the cake.
Make up the sauce... Mix the corn flour & orange juice together in a cup.
Place the water & sugar in a pan. Heat gently until all the sugar has dissolved.
Add the orange juice & corn flour. Stir until thickened.
Serve the cake with some hot or cold sauce.
