Gluten and Dairy Free Orange and Coconut Traybake

You Will Need (11 things)

  • 210 g gluten free self raising flour
  • 260 g dairy free natural yoghurt
  • 180 g Caster Sugar
  • 80 ml Vegetable Oil
  • 3 Eggs
  • 55 g Desiccated Coconut
  • Zest of one orange
  • 60 g Icing Sugar
  • 1-2 tbsps orange juice
  • Desiccated coconut and Orange Zest for decorating
  • For the glaze:

Steps (4 steps, 45 minutes)

    Preheat the oven to 180 oC
    Whisk together the yoghurt, eggs, zest and vegetable oil

    Stir in the flour, caster sugar and coconut
    Pour into a lined 8” by 8” cake tin

    Bake for 35 minutes
    Remove from the tin and allow to cool completely

    Make the glaze by stirring together the icing sugar and orange juice
    Drizzle over the cake and sprinkle with desiccated coconut and orange zest
