Gluten and Dairy Free Orange and Coconut Traybake

You Will Need (11 things)
- 210 g gluten free self raising flour
- 260 g dairy free natural yoghurt
- 180 g Caster Sugar
- 80 ml Vegetable Oil
- 3 Eggs
- 55 g Desiccated Coconut
- Zest of one orange
- 60 g Icing Sugar
- 1-2 tbsps orange juice
- Desiccated coconut and Orange Zest for decorating

For the glaze:
Steps (4 steps, 45 minutes)

Preheat the oven to 180 oC
Whisk together the yoghurt, eggs, zest and vegetable oil -

Stir in the flour, caster sugar and coconut
Pour into a lined 8” by 8” cake tin -

Bake for 35 minutes
Remove from the tin and allow to cool completely -

Make the glaze by stirring together the icing sugar and orange juice
Drizzle over the cake and sprinkle with desiccated coconut and orange zest
