Many cocktails that originated in the late 19th century were designed to be mixed with Old Tom gins. Many have since been adapted or updated to work with the dry gins that came into vogue in the 20th century; however, these drinks are more than historical curiosities or windows into the past. Many of them, true to the cocktail creator’s intentions, are superb cocktails in their own right. You can update them, but until you’ve had a Tom Collins or Martinez with Old Tom gin, I’m not sure you can truly say you’ve tasted them. GLASS: COLLINS/HIGHBALL

Fill glass halfway with cracked ice. Add gin, lemon juice, simple syrup and water. Stir to combine and top with soda water. Garnish with lemon and cherry. Serve. * To taste might be a better recommendation. As some Old Tom gins are actually sweetened with sugar, you might find the cocktail needs less sweetening. For Old Toms that are botanically sweetened, you may find that the drink is too sour, in which case double or triple the simple syrup.
