This is a tasty cake.
You can add 1/2 cup of chopped pecans to the topping for a crunchier top. Just add them in along with the coconut.

You Will Need (17 things)

Cake
- 1 1/4 cup Water
- 3/4 cup Oats
- 1/4 Butter
- 1 Egg
- 3/4 cup Brown Sugar
- 3/4 cup + 1/2 cup Plain Flour
- 3/4 tsp Bicarbonate Of Soda
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- Pinch Salt

Topping
- 1/4 cup Butter
- 3/4 cup Brown Sugar
- 1/4 cup Milk
- 1 cup Coconut
- 1 tsp Vanilla
Steps (9 steps, 50 minutes)

Heat oven 350/175 degrees.
Heat water, oats & butter together in a pan.
Cook for 5 mins.
Set aside to cool.

In a bowl mix egg & sugar together.

Add the oat mixture to the egg.
Mix through.

Fold in flour, Bicarb, cinnamon, nutmeg & salt.

Bake for 35 mins until cooked through.

For the topping...
In a pan heat to the butter, sugar & milk.
Mix to combine.
Remove from the heat.

Add the coconut & vanilla.
Stir through.

Pour topping over warm cake .
Place in the oven for 5 mins until the topping bubbles up.

Remove from the oven & serve warm.
