You can use store bought caramel but it's better to make the caramel by yourself.

You Will Need (19 things)

Caramel
- 1 tin Condensed Milk
- 1/2 tsp Sea Salt

Base
- 2 1/4 cup Digestives Crushed
- 2 tbsp Sugar
- 2 tbsp Brown Sugar
- 10 tbsp Butter Melted

Cheesecake
- 1 cup + 2 tbsp Heavy Cream
- 24 oz Cream Cheese Room temp
- 1/4 cup +2 tbsp Sugar
- 2 tbsp Icing Sugar
- 1/4 cup Sour Cream
- 1/2 of Lemon Juice
- 1 tsp Vanilla

Topping
- Caramel Sauce
- Caramels
Steps (10 steps, 120 minutes)

Caramel... Heat oven 220/425 degrees.
Pour the condensed milk into a glass dish, sprinkle with salt & cover with foil.
Place in a ban Marie & bake for 1 1/2- 2 hrs.
Cool to room temp.

Base...
Combine the biscuits, sugars, salt & butter together.
Press into a tin.
Place in freezer until needed.

Cheesecake...
Whisk the cream until stiff peaks.
Set aside.

Mix the cream cheese, icing sugar & sugar together.

Add the sour cream, lemon juice & vanilla.
Mix together combine.

Fold in the cream.

Remove the base from the freezer.
Pour the caramel over the base.
Refrigerate for 30 mins.

Top with the cheesecake mixture.
Place in the fridge for at least 8 hrs but best overnight.

Decorate with caramel sauce & caramels.

Cut & serve.
