Nettle Pesto

Blanch stinging nettles for 4-5 mints this neutralizes them and stops them stinging you. Drain and blot the water out of them.
Put your ingredient's into a blender and wiz till you get a course texture, or alternatively put ingredient,s into a pestle an mortar starting with garlic and pine nuts.
Add olive oil depending on texture required, if using for a sauce add more oil, less for a spread.

To store put a layer of oil over the top to stop the air getting to it.

  • 2 x Garlic Cloves
  • 2 tbsp grated Parmesan Cheese
  • 2 tbsp roasted Pine Nuts
  • 8 tbsp Blanched Nettles
  • Sea Salt
  • Olive Oil
