Description

I am throwing a horror movie themed engagement party for my little sister and her fiance next month but I needed to do a test run on some of my food ideas first. Here is my first attempt at a meat head. :)

Instructions

  1. Small 0715111754 1310838416

    Mix 5 lbs of ground beef*, 4 cups of minced onion, 10 oz of roasted garlic seasoned bread crumbs, 4 eggs, a 1/2 cup tomato sauce, and the seasonings in a large bowl until well mixed. (You can always use your favorite meat loaf recipe but make sure it is firm enough to be sculpt-able. Some recipes are soft and hard to shape into details.) Take about 80% of that and form in into a faceless head shape. Use bits of onion for the blank eyes and teeth and the rest of the meat mixture to shape the face. *I used 80/20 ground beef because I wanted the head to become disfigured when the fat rendered off.

    Place head on a rack in a pan and cover the head with 1 cup of tomato sauce, being careful to not cover the eyes and teeth. The rack will keep the head out of the grease that will render off while it is cooking.

    Cover the face with slices of provolone cheese, again being careful to not cover the eyes and teeth. Provolone is great because it doesn't get runny when it melts. I also added a few toothpicks to some of the side pieces to make sure they stayed in place while cooking.

    Bake at 350-degrees for about 100 minutes, or 20-25 minutes per pound of meat. The internal temperature should be 160-degrees and the cheese should be burnt to look like charred skin.

    Serve on a platter with a large knife sticking out the forehead. Hack and serve! :)
