There is really no quantity for this soup. You can add more of one thing or less of the other. I made this with some left over mushrooms I had but I did use home made chicken stock. This is not essential. Chicken stock cubes will do the job. You could also blend the soup to make it smooth or leave it chunky.

Chop the onions & garlic. Fry in a little oil but do not brown. Chop the mushrooms. Once the onions are translucent, add the mushrooms.
Cook the mushroom for approx 10 mins.
Cut the potatoes and add to the mushroom. Cook through for approx 3 mins.
Add the stock and simmer for 20 mins.
If you are going to blend, do this now and serve with crusty bread.
