These were the highlight of my childhood. My mother makes the best pancakes in the world, and no I'm carrying on the tradition of making these fluffy morsels for the people I love most. These also make a great Mothers Day breakfast in bed.
These were the highlight of my childhood. My mother makes the best pancakes in the world, and no I'm carrying on the tradition of making these fluffy morsels for the people I love most. These also make a great Mothers Day breakfast in bed.
Your ingredients.
You're going to be using a cup measure for a lot of this stuff.
Sift your dry ingredients into your bowl.
Measure out your milk. Separate your eggs, if you're going to, and add the yolks into your milk. Then whip your egg whites until stiff peaks. *I didn't separate my eggs, I just plopped them both in the milk. It doesn't create any problems, the pancakes just aren't as fluffy.
Pour your liquids into the bowl with your dry ingredients.
Whisk everything to combine. If you've whipped your egg whites now would be the time to gently fold them in.
I recommend using a ladle of some sort, because it gets too messy when you try to pour directly from the bowl.
Once they start looking like this, with the bubbles rupture and the edges just slightly starting to looked cook, it's time to flip them.
Make up the rest of your batter and stack on a plate for people to serve themselves. Enjoy!
