I found this can of mock duck while in Liverpool with Jenny and it had been sitting in the cupboard waiting for a spark of recipe inspiration. When my parents gave me a Spiralizer for Christmas, inspiration hit and I decided to make summer rolls filled with shredded hoisin duck. The mock duck was very convincing!
I found this can of mock duck while in Liverpool with Jenny and it had been sitting in the cupboard waiting for a spark of recipe inspiration. When my parents gave me a Spiralizer for Christmas, inspiration hit and I decided to make summer rolls filled with shredded hoisin duck. The mock duck was very convincing!
I discovered this can of vegetarian mock duck in Liverpool's Chinatown and was really curious what it would be like, so decided to turn it into summer rolls. Cook the rice noodles and slice or spiralize a carrot and half a cucumber before you start. Place in bowls and set on your table with a plate of rice paper rolls and bowl of warm water.
The duck came in chunks, so I used a fork to shred the meat and get the texture I wanted.
Lightly toast some sesame seeds with a little olive oil.
And then add the duck, some sliced ginger, chopped garlic and a jar of hoisin sauce to the pan.
Serve the duck hot and sizzling and let your guests make their own rolls.
To make a summer roll, dip the rice paper into warm water for a few seconds.
Lay on your plate and top with a few noodles, carrots, cucumber and duck.
Fold the sides into the middle and then fold up the bottom.
