Wash the mushrooms and cut into chunky slices.
Cook in a frying pan with a little butter or olive oil.
Once the mushrooms have browned and softened, remove from the heat and strain to get rid off excess juice.
Chop the garlic and fry with the butter until it begins to melt.
When the butter begins to brown, add the pine nuts and miso paste.
Stir the miso into the butter and season with soy sauce.
Stir in the mushrooms.
Serve on a toasted slice of sourdough.
Top with grated parmesan, some fresh parsley and season with salt and pepper before serving.
