This is really delicious! My dad and I have made this a few times and it's nicer every time. The cookbook suggested it be served with pasta but we served it with mashed potato. Also, it's best to make more of the tomato sauce stuff so the meat is covered more & you can present it better on the plate. :)

Extra Virgin Olive Oil Lamb Shanks 1 Red Onion chopped 2 Garlic Cloves crushed 1 Sprig of Fresh Thyme 2 Bay Leaves 3 cup Fresh Mint chopped 425 g Can of Crushed Tomatoes 2 cup Vegetable Stock 3 tbsp White Wine 12 Potatoes
