Forget mince pies, use your leftover Christmas ingredients to bake a giant mince pie tart filled with fruit stewed in alcoholic iced tea from Percy's Tea.
Forget mince pies, use your leftover Christmas ingredients to bake a giant mince pie tart filled with fruit stewed in alcoholic iced tea from Percy's Tea.
Place the dried fruit in a bowl and pour in the bottle of alcoholic iced tea and leave to soak over night.
Grate the zest from an orange into the fruit.
Squeeze the juice from the orange into a pan with the brown sugar and gently heat, stirring until the sugar has dissolved.
Add the dried fruit along with any iced tea that's left. Leave to simmer for 10 minutes.
Add the cranberries and simmer for another 5-10 minutes until the fruit has softened.
Line a pie dish with shortcrust pastry and pour the fruit into the centre.
Top with stars cut from the excess dough.
Bake at 180'C for 20 minutes.
Dust with icing sugar and serve.
