Mighty Mint Granita

We literally have bushes of mint in our backyard, so I wanted to do something with it. I’m a big fan of iced tea, so a mint simple syrup seemed perfect! NOTE: this recipe is all about ratios. Stick to the ratio, and you can do however much or little you want RATIO: 1-1 water to sugar (I used two cups) 21/2 to 3 -1 mint to everything else (I had a tone of mint and just tossed it all in. this can vary depending on how strongly minty you want your syrup)

Description

Instructions

    Go get some mint!

    Clean off the mint and get rid of the stems

    Put equal amounts of sugar and water in a saucepan

    Add in the mint, put on medium heat and stir until all the sugar is dissolved (usually about 2-4 minutes)

    Turn off the heat and let it sit for 20 – 30 minutes (until cooled off)

    Strain the mint out, and toss it.

    NOTE: if you want, you can stop here now and have a very nice mint simple syrup. It works great in tea, or put a drizzle over some pound cake or angel food cake, etc…. If not, continue on to make a granita. I don’t have pictures for the next steps, because I just wanted a batch of simple syrup, but it’s pretty easy to follow!

  8. Put the syrup in a rectangular cake pan, stick it in the freezer for 20 minutes.

  9. Take it out and scrape it up using a fork (like making shaved ice)

  10. This next step is time consuming, but it’s not hard. Put it back in the freezer, and every 15 minutes or so, take it out and scrape it again. You’ll want to do this two or three times.

  11. Voila! A beautiful mint granita!! Post pictures if you make it, I want to see!
