Mexican Onion Soup
My Mexican twist on French Onion Soup with tortilla chips and sweetcorn!

I love trying to invent new recipes with whatever I find in the kitchen and this week there was a half a bag of tortilla chips and some onions, which I decided to turn into my take on French Onion Soup. It was really tasty and made enough for four servings.

You Will Need (7 things)
- 1 l Vegetable Stock
- 2 Red Onions
- 250 g Sweetcorn
- 150 g Tortilla Chips plus a handful to serve
- 2 tsp Garlic Powder
- Salt and Pepper
- Tabasco Sauce to serve
Steps (5 steps, 15 minutes)

Slice and fry the onions until golden.

Place in a blender with the sweetcorn and blitz for a few seconds so that it retains some texture.

Place in a pan and add the vegetable stock and crush in the tortilla chips.

Bring to a simmer, stirring until the tortillas have softened into the soup, add the garlic powder and season with salt and pepper.

Serve hot with some crunchy tortilla chips and a few shakes of Tabasco sauce.
