These are tasty, filling & a great dinner treat.

You could use store bought chicken to cut down the cooking time.

You can make it spicier by adding more chilli & powder.

You Will Need (24 things)

  • Mexican Chicken

  • 2 lbs Chicken Breast
  • 1 tbsp Olive Oil
  • 1 Tinned Tomatoes
  • 2 Chillies Chopped
  • 4 tbsp Brown Sugar
  • 1 tbsp Chilli Powder
  • 1 tsp Paprika
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Dried Oregano
  • Sour cream sauce

  • 2 tbsp Olive Oil
  • 1 tbsp Butter
  • 3 tbsp Flour
  • 2 cup Chicken Stock
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 cup Sour Cream
  • 1 Chilli Chopped
  • 1/2 cup Cheese Grated
  • Tortillas

Steps (13 steps, 150 minutes)

    Coat the chicken in olive oil.

    Place in a large pot.

    Add all other Mexican chicken ingredients to pot.

    Stir & cook on a low heat for 2 hrs.

    Remove the chicken from the pot.

    Reduce the stock by more than half.

    Shred the chicken.

    Return to the pot.

    Make the wraps...

    Place chicken & cheese (if desired) in wrap.

    Roll up. Place in a dish.

    Brush with olive oil & place in oven 400/200 degrees for 10 mins.

    Turn, brush with oil & cook for a further 10 mins.

    Sour cream sauce...

    Melt butter & olive oil on a pan.

    Add the chopped chilli.

    Cook for a min or so.

    add the flour.

    Stir & cook out for a min.

    Gradually add the chicken stock until all stock is used up.

    Add the spices & cook out for a couple of mins.

    Add the cheese & stir until melted.

    Take off heat & add the sour cream.

    Stir through.

    Plated up the wraps & pour sour cream sauce over.

    Top with additional cheese, salsa & guacamole if you wish.
