Fill a small pot with 2 cups of water. Add one cup of quinoa and bring water to a boil. Once a boil is reached, reduce the heat, cover, and let simmer for 15-18 minutes or until all water is absorbed.
While the quinoa is cooking, steam the broccolini until it turns bright green, about 5 minutes. Transfer to a cutting board and give it a rough chop.
When the quinoa is done, transfer to a large bowl and fluff with a fork. Add red peppers, chickpeas, capers, olives, oregano,chopped broccolini, and salt salt and pepper. Mix well.
Add the juice of one lemon, 1 tablespoon olive oil, parsley, and then gently fold in the feta cheese. Give everything a toss and place in the refrigerator for 30 minutes to chill.
Serve and enjoy!
