Set your oven to 325 Degrees F. and prep your meatloaf as you normally would. For mine: 1 lbs. ground turkey, 1 egg, bread crumbs (to make it more formed and you can sub crackers), yummy spices.
Grease your muffin tin and tightly pack the mixed meat.
Place the tin in your pre-heated oven (325 degrees F.) for 25-35 minutes. That's me there getting an inferno blast in the face!
Now for the potatoes. While I love fresh, homemade potatoes; I find that instant potatoes satisfy my starch needs RIGHT AWAY! To help spruce them up though, I save the butter/garlic sauce from a certain pizza joint and use that as a kicky flavor.
Make sure you check your meat cakes. I rely on my trusty meat thermometer since this was my first go-around and my oven is tempremental.
Once the patatoes are done put them into a ziploc bag and snip the corner. This serves as a pastry bag would for frosting.
Pipe the "frosting" (potatoes) on to the fully cooked meat "cakes." Pile 'em high!
Garnish with spices or if you're really creative veggies and such. Good Eatins!
