Mashed Potato Omelet

My mom's boyfriend from ages ago taught me this, and while he is long gone, this recipe has stuck around.
Perfect with left over mashed potatoes, this is really easy to put together, and to make many. Most don't think this will be very tasty until they taste it :)

You Will Need (6 things)
- Butter
- 2 Egg(s)
- Salt
- Pepper
- Mashed Potatoes
- Cheese

Dish out some of your left over mashed potatoes into a microwave safe bowl.
For two eggs, about 1/4 to 3/4 of a cup will fill your omelet.

Microwave your potatoes so that they are hot, about 1.5 to 2 minutes.
And yes, I took a picture of my potatoes microwaving XD

Beat 2 eggs, add salt and pepper to taste.

Melt a bit of butter in a small pan on medium heat.

Once the butter has been heated, pour the beaten eggs into the pan.

While the eggs are cooking in the pan, grate a bit of cheese. Cheddar works best, but I wasn't sure how old mine was o_O So I just made do with some Parmesan.
Add as much or as little cheese as you want. This is about... 1/2 a cup? Dunno, just grate as much as you want to eat XD

Once the egg has cooked through on the bottom, flip it over.

Smoosh the hot mashed potatoes onto half the omelet.
Sprinkle 2/3 of the cheese you grated onto the potatoes.

Close the omelet and sprinkle the remaining cheese on top.

Cover and reduce heat to low, to allow the cheese to melt.

Remove from pan, and serve :)
