Malteser Cake with malted icing & chocolate ganache

This is a malted chocolate cake with chocolate malt filling & chocolate ganache. Finished with maltesers.
It is quite sweet & very calorific.

You Will Need (22 things)

Cake
- 2 1/4 cup Plain Flour
- 1 1/4 cup Sugar
- 3/4 cup Cocoa Powder
- 1 1/2 tsp Bicarbonate Of Soda
- 1 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Milk
- 1 cup Malted Milk Powder
- 1 cup Oil
- 3 Eggs
- 1 tsp Vanilla
- 1 cup Sour Cream

Filling
- 1 1/2 cup Butter
- 3/4 cup Cocoa Powder
- 1 1/4 cup Heavy Cream
- 3/4 cup Malted Milk Powder
- 7 1/2 cup Icing Sugar

Ganache
- 8 oz Chocolate
- 1 cup Heavy Cream
Steps (18 steps, 90 minutes)

Heat oven 180/350 degrees.
Mix milk & malted powder together.

Add all dry ingredients to a bowl.

Add the remaining ingredients to the milk mixture.

Combine the wet ingredients into the dry ingredients.

Pour mixture into tins & bake for approx 30 mins, until cooked.

Remove from oven & allow to cool completely.

Make the filling...
Cream the butter & cocoa together.

In another bowl combine the cream & malted milk powder together.
Mix together.

Add cream to butter mixture & combine.

Gradually beat in the icing sugar to make a thick icing filling.

Split the cakes & fill with the chocolate malted filling.

Cover the outside of the cake with the chocolate malted filling.

Make the ganache...
Heat the cream in the microwave until scolded.

Add the chocolate & cover for 5 mins.

Remove the cling film & stir together.

Let cool for 5 mins.
Pour the ganache over the cake.
Allow to run down the sides a little.
Allow to set.

Pipe small rosettes around the cake.
Top with maltesers.
