Description

The following is a recipe for a traditional Macedonian dish called "Tavce Gravce" which would literally be translated as beans in a pot.

Instructions

Ingredients •2 cups Northern (white) Beans, washed •Water • a teaspoon of sunflower oil •1 large onion, quartered •2 dried peppers • chopped parsley •1 tablespoon salt •salt and pepper to taste For the roux •½ cup sunflower oil •2 tablespoons flour • 1 teaspoon paprika

  2. Instructions 1.Place the beans in a big. pot and add water. The water should be 3-4 cm above the beans. 2.Pour in the oil. 3.Add the quartered onions. 4.Cook the beans over medium heat until soft (less than 2 hours). 5.Stir often and add water. When the beans are ready, make the roux. You need roux as the thickening agent. Set the beans aside and put the oil in a saucepan. When the oil is hot, add the flour and paprika - stir constantly for about 10-15 seconds, then pour the roux over the beans. Put the beans on slow heat for about 2-3 minutes. Preheat oven to 365 degrees. Pour the beans into a casserole dish or a large pot with ladle and add the water (the beans were cooked in) just to cover the beans. Add the dried peppers. Add salt to taste. Bake for about 20 minutes or until the beans get a spiderlike crust. If you leave them too long they would dry. When ready, set them aside to cool off. Sprinkle with chopped parsley and serve with fresh homemade bread.
