After visiting Ladurée and having a snoop through my Nana's recipe collection, I was inspired to have a go at making my own macaroons. (Makes a small batch of around 10 macaroons, multiply the recipe to make multiple colours and flavors.)

Pour the egg white in to a measuring jug and mix in the food colouring and flavoring. Add the caster sugar and beat together with a fork. Place the measuring jug in a bowl of warm / hot water and continue to stir for 5 minutes, this should help the sugar to melt, giving the mixture a smooth consistency.
Mix together the almond meal and the icing sugar.
Add this to the egg mixture and mix well. The consistency should be thick but still runny.
Cover your baking tray with baking paper.
Use an icing bag to make small dots of batter on the baking tray (remember to make an even number).
Repeat the previous steps for any other colour and flavor of macaroons you want to make. Bake the macaroons in an oven set at 140'C for 15 - 20 minutes. Keep an eye on them because they will burn quickly if you leave them in for too long.
When the macaroon have cooled down, take one half and spread it with whatever filling you like. I used strawberry jam for my pink ones and lemon curd for my yellow ones.
Place another macaroon half on top.
Serve with a delicious cup of tea or coffee. Enjoy!
