I don't think much people celebrate the beginning of the fall but I certainly do. This bread is especially made for the Equinox. It will take a while to make, but it's not difficult.

Description

I don't think much people celebrate the beginning of the fall but I certainly do. This bread is especially made for the Equinox. It will take a while to make, but it's not difficult.

Instructions

    Cut the onions in pieces of your desired size. Melt the butter in a heavy pan and bake the onions until they are light yellow. Add the sugar and bake until the onions are a little caramelized. Let it cool.

  2. Mix the flour, rye flour, salt, yeast and cheese in a bowl. Make a hole and put the onions in it. Add the water and knead. If the dough sticks on the fingers add a tablespoon flour.

  3. If the ball is stiff, knead it for 10 more minutes on a clean, flat, floured surface. The dough must be strong and resilient.

    Put the ball back in the bowl and leave it to rest for 1 or 1.5 hour with a wet tea towel covering the bowl. (I took the picture after the rest)

    Knead the dough again and make balls of your desired size. You can make an onion shape if you like to. Put the balls on a floured griddle and leave them to rest for 30 more minutes covered with a humid tea towel. After the rest cover the breads with a beaten egg. Use little bowls so the towel won't touch the bread.

    Bake the breads for 15 minutes in a preheated oven on 220 degrees.
