I've always loved the little Biscoff cookies you sometimes get with your coffee and when one of my friends mentioned you could buy a spread made from them that was tasty enough to eat with a spoon, I couldn't wait to try baking with it.
I've always loved the little Biscoff cookies you sometimes get with your coffee and when one of my friends mentioned you could buy a spread made from them that was tasty enough to eat with a spoon, I couldn't wait to try baking with it.
Whisk together the butter and brown sugar until light and fluffy.
Mix in the flour and salt until you have a thick dough.
Separate the dough into two.
Roll each lump of dough into a log and coat in sprinkles or crushed biscoff biscuits.
Wrap in cling film and pop in the freezer for 15 minutes or the fridge for an hour.
When you're ready to bake the cookies, cut into slices and bake for 10 minutes at 180'C.
Leave to cool before topping one cookie with Lotus Biscoff crunchy spread and sandwiching another cookie on top.
