These are a little bit of an experiment that turned out great. I wanted to make lime coconut cupcakes but didn't have any limes or juice so thought I would experiment with the Cochrane Cottage lime drizzle. The cupcakes turned out really well & tasted delicious.
These are a little bit of an experiment that turned out great. I wanted to make lime coconut cupcakes but didn't have any limes or juice so thought I would experiment with the Cochrane Cottage lime drizzle. The cupcakes turned out really well & tasted delicious.
Heat oven 180/350. Melt 1 1/2 tbsp butter. Put remaining butter in fridge.
Place self raising flour, 2 oz coconut & 2 oz sugar in bowl. Mix together.
Mix melted butter, egg, milk & lime drizzle.
Make a well in the centre of the dry ingredients. Mix in the wet ingredients.
Spoon mixture into cases.
In a bowl combine plain flour, remaining sugar & remaining coconut.
Add the cool remaining butter & rub in to create rough bread crumbs.
Spoon on top of cupcakes. Bake for approx 15 mins.
Remove from oven & cool.
Mix up butter icing if using..... Cream icing sugar & butter together.
Pipe icing on top of cupcakes. Sprinkle with more coconut.
