I absolutely love these, they're easy to make and just a great little treat to have around. They are raw plant based and are free from gluten, dairy, egg and refined sugar. Sometimes I leave the chocolate coating out and just make the nut truffle balls on their own. There are so many different variations of these, you can add a little orange extract for a chocolate orange nut truffle or add a little mint. I like to get creative with them. This recipes makes about 15 balls depending on how big or small you roll them.

Sometimes I leave the chocolate coating out and just make the nut truffle balls on their own. This recipes makes about 15 balls depending on how big or small you roll them.
Depending on what dates you use, I like to use dried dates as they are more cost effective. Soak them in a little warm water for about 10 minutes then drain and set aside. Place the almonds and hazelnuts (keeping the +15 extra aside) to a food processor and pulse a few time till finely chopped. Add cocoa powder and pulse till mixed.
Add the soaked dates to the chocolate nuts and blend till the ingredients is combined, usually this starts to form one big ball in the food processor or comes together like a sticky crumb. If the mixture is a little dry, add more dates one by one or a little water.
Now to get rolling, this gets a little sticky. Take some mixture and before rolling add a hazelnut in the middle (you can do this for each ball or leave them out) now roll to form a ball and set aside. Repeat until the mixture is done. You can go onto step 4 & 5 to coat the balls with chocolate or leave them as is and dust with a little cocoa powder.
I like to use dairy free dark chocolate but feel free to use whatever chocolate slab you like. Create a water bath by using a pot and add hot water from the kettle, place a glass bowl onto the pot so that it just sits inside. Make sure the bottom is not touching the water. Break the chocolate into pieces and add to the bowl, leave it to melt. No needs for boiling the water on the hob. Once melted, take the bowl out of the pot and cool slightly.
Now to coat the balls with the melted chocolate, just roll them around a little in the bowl till fully coated and set aside on baking paper to set. You can sprinkle a little chopped hazelnuts or dust with cocoa powder. Once all balls are coated I place in the fridge to set completely for about 15 minutes. Enjoy :)
