I've never really followed the Great British Bake Off before but I'm super into baking at the moment so I thought I'd bake along with the show. The first challenge was a madeira cake which was pretty plain, so I decided to spice mine up with lemon sherbets and candied lemons.
I've never really followed the Great British Bake Off before but I'm super into baking at the moment so I thought I'd bake along with the show. The first challenge was a madeira cake which was pretty plain, so I decided to spice mine up with lemon sherbets and candied lemons.
Whisk together the butter, sugar and eggs.
Grate in the zest from the lemon and add the poppy seeds.
Mix in the flour, ground almonds and vanilla.
Spread the batter into a lined baking tin.
Bake for 50 minutes at 180'C until golden.
While the cake is baking, cut the lemon into thin slices.
Crush the lemon sherbet candies with a mortar and pestle.
Add the sugar to the powdered candies.
Heat the water, crushed candies and sugar in a small saucepan until they have dissolved.
Bring the syrup to a simmer.
Add the lemon slices and simmer for 15 minutes.
Fish the lemon out and place on a sheet of baking paper to harden.
Remove the remaining syrup from the heat.
Drizzle the syrup over your cake and place the candied lemons on top.
Sprinkle with toasted blanched almonds.
Top with fresh raspberries.
Dust with icing sugar and serve!
