Zesty lemon Muffins. Good recipe to use up left over yogurt.

You will need

Muffins
1 3/4 cup Plain Flour 3/4 cup Sugar 1 tbsp Lemon Zest & lemon juice 1 tsp Baking Powder 3/4 tsp Bicarbonate Of Soda 1/4 tsp Salt 1 Egg 1 cup Greek Yogurt 6 tbsp Butter Melted
Icing
1 tbsp Lemon Juice 3/4 cup icing Sugar 1 tsp Lemon Zest

Description

Zesty lemon Muffins. Good recipe to use up left over yogurt.

Instructions

1. 

   Heat oven 400/200 degrees Combine the flour, sugar,baking powder, bicarbonate,salt & zest.

2. 

   In a bowl combine lemon juice, egg, yogurt & butter.

3. 

   Stir dry & wet ingredients together until just combined.

4. 

   Pour into cases. Bake for 20-24 mins until cooked through. Cool completely.

5. 

   combine the icing ingredients. Stir to combine. Add a little water if needed.

6. 

   Spoon icing over Muffins.

7. 

   Serve.
