This is a great home made Lemon Meringue Pie. You can use homemade or shop bought pastry.
This is a great home made Lemon Meringue Pie. You can use homemade or shop bought pastry.
Bake the pastry according to instructions.
Heat oven 325/160 degrees. Filling... In a pan mix sugar & corn flour.
Add the milk, lemon juice & water. Mix until smooth & no lumps. Add zest & bring to the boil, stirring all the time.
Add the lemon mixture to the egg yolks, 1/4 cup at a time until one cup has been added. Add the egg mixture into the pot & cook for 1-2 mins. Remove from the heat.
Add the butter & vanilla & stir through.
Pour into the pastry case. Set aside.
Meringue... Combine 1 tbsp sugar & 1 tbsp corn flour together.
Slowly pour in the water to no lumps are in the mixture.
Cook over a medium heat until mixture comes to a boil. Cook for 20 seconds. Remove from the oven heat & allow to cool.
Whisk egg whites, cream of tartar & vanilla together until soft peaks.
Slowly add 1/2 cup sugar until stiff peaks.
On low speed add the corn flour mixture one tbsp at a time.
Pour over the lemon mixture. Make sure to push the meringue to the edge.
Bake for 18-25 mins until golden brown. Cool completely.
Serve.
