This is a really tasty treat.

I used shop bought pastry & lemon curd filling, but you could easily make your own if you have time.

You Will Need (5 things)

  • Short Crust Pastry
  • Lemon Curd
  • Corn Flour
  • 4 Egg White
  • 6 tbsp Sugar

Steps (4 steps, 40 minutes)

  1. 1

    Roll out the pastry.

    Bake blind following packet instructions.

    Allow to cool.

    Once cool sprinkle a little cornflour in the base of the pastry case.

    Add a jar of lemon curd.

    Place egg whites in a bowl. Whisk until frothy.

    Add the sugar one spoon at a time.

    Whisk until stiff & shinny.

    Spoon on top of the lemon curd.

    Spread evenly & peak with create peaks.

    Place in the oven for 15 mins or until brown on top. (175 degrees)

    Remove & allow to cool.
