Lemon Gin Bundt Cake

A zesty, gin infused lemon & poppy seed bundt cake

This bundt cakes packs a zesty punch with lemon & poppy seeds in the cake and Anno Gin in the drizzle icing.

You Will Need (11 things)

  • 3 oz Annp Gin
  • 80 g Poppy Seeds
  • 200 g Sugar
  • 3 Eggs
  • 200 g Butter
  • 150 ml Soya Milk
  • 1 Lemon
  • 300 g Self-Raising Flour
  • For the icing

  • 200 g Icing Sugar
  • 1 oz Gin

Steps (10 steps, 45 minutes)

    Pour the milk into a jug and add the gin. Stir in the poppy seeds and grate in the zest from the lemon and then squeeze in the juice from half of the lemon.

    Whisk together the butter and sugar and then add the eggs, one at a time.

    Whisk in the flour and milk a little at a time until combined.

    Grease a bundt take and scrape the batter in, smoothing off the top.

    Bake at 180'C for 45 minutes until golden.

    Turn out onto a plate and leave to cool.

    Place the icing sugar in a bowl with the gin and the juice from the remaining half of the lemon.

    Stir until combined and runny.

    Drizzle the icing over the top of the cake.

    Sprinkle with some more lemon zest and poppy seeds.
