You will need

For the base
25 ml Citrus Vodka 25 ml Limoncello 25 ml Lemon Juice 2 tsp Of Lemon Curd 25 ml Amaretto 25 ml Sugar Syrup 1 Egg White 12 ½ ml Sugar Syrup

1. To make the base, add all the ingredients to your mixing glass and then shake hard with cubed ice. Double strain into a chilled cocktail glass.

2. For the foam, whisk up the ingredients until the mixture is thick in consistency, like a meringue. We do this in a cocktail shaker with the spring of a hawthorn shaker, or occasionally with a foam gun.

3. Gently add the foam on top of your base and sprinkle some brown sugar and lemon zest on top. Caramelise the sugar with a blowtorch and garnish with a shortbread finger.

4. This drink looks like a dessert and you will look like you are showing off when you make it. Devour with a smile.
