Instructions

    Preheat Oven to gas mark 4-5/ 180C/ 350-375F

    Crush the biscuits until they are fine. You can use a food processor. We used a rolling pin and bashed them!

    Melt the butter. We did this in the microwave for about 20 seconds on full power.

    Mix the melted butter and biscuits till just combined.

    Press the mixture in the bottom and sides of a 8-9 inch spring form or loose bottomed tin.

    Cover and put in the fridge to set. Approx 30 mins.

    Zest lemons.

    Place the zest, caster sugar and soft cheese in a bowl and mix till smooth.

    Mix in the eggs one at a time.

    Pour the mixture into your cooled biscuit base and bake in a moderate oven for approximately 1 hour or until it's set. Ours took a little longer.

    Top the cheesecake with lemon curd. (We warmed our lemon curd in the microwave for 15 seconds just so it was a bit softer) Put in the fridge for 3 hours or overnight. Remove from the tin just before serving.

    My niece decided to sprinkle some extra lemon zest on top just to finish it off. Ta dah!! We tried it warm and it was nice similar to egg custard but chilled... (3 slices later) it got the thumbs up from my niece!
