Lemon Curd Butterfly Cakes

I made Lemon Meringue Pie and had some of the lemon curd leftover so i decided to make some tasty cupcakes too. I hope you like them and my instructions are easy to follow!

Description

I made Lemon Meringue Pie and had some of the lemon curd leftover so i decided to make some tasty cupcakes too. I hope you like them and my instructions are easy to follow!

Instructions

  1. Pop you oven on to 170C. Zest your lemon and put the zest to one side for later.

  2. Cut your lemon in half and put one half away for later. Now add the juice from half of the lemon to your mixing bowl.

  3. Add the 6oz of Sugar and both eggs to the lemon juice and whisk until smooth.

  4. Add the 6oz of flour and tbsp of baking powder and whisk until you can see some air bubbles in the mixture.

  5. Pop your mixture into cupcake cases and bake for 10 Mins turn and bake for a further 10 mins.

  6. While your cakes are cooking you should make the lemon curd. I used a Greens Lemon Pie Filling Sachet but you could just use a regular jar or lemon curd, or maybe even make your own. :]

  7. When your case are ready transfer them to a wire tray and wait until they are completely cooled.

    Im sure everyone has made butterfly cake before and know what to do but what the hey, i will show you anyway. First take a cupcake and with a serrated knife cut a circle out like so.

    Fill the hole in the cupcake with lemon curd. Cut the left over bit of cupcake in half.

    Pop the two bits of cupcake into the lemon curd like so and you should have something like a butterfly.

  11. Put 3oz of icing sugar in a bowl and add the lemon zest from earlier and the juice from the other half of your lemon. Mix it all together and drizzle all over your beautiful cakes. :D
