You Will Need (8 things)

  • Cookies

  • 1 cup Butter
  • 1/3 cup Icing Sugar
  • 1 tsp Vanilla
  • 1 2/3 cup Plain Flour

  • Filling

  • Lemon Curd
  • Icing Sugar

Steps (6 steps, 30 minutes)

    Cream butter, vanilla & 1/3 cup of icing sugar.

    Add flour & bring together to form a dough.

    Place in the fridge for 30 mins.

    Heat oven 175 degrees.

    Roll the dough into balls & place on a tray.

    Make an indent in the middle of the dough.

    Bake for 8-10 mins.

    Remove from the oven & cool completely.

    Fill the indent with lemon curd.

    Sprinkle with icing sugar.

    Serve.
