Whenever I feel down cooking something up is sure to help. With so many lemons around my house this seemed like a logical choice...I think the pan I used was to big but next time. :3
Preheat the over to 350. combine 1 1/2 cups of flour, 1/4 cup of sugar, and 1/4 tsp salt.
Add the cubed butter to the flour and using your hands, combine the butter with the flour until you're left with a crumbly mixture.
Press the crust mixture into a greased and/or lined and greased pan. Bake the crust for 15-20 minutes until the edges are golden. (I baked mine for 17 minutes)
While the crust is baking mix combine the zest of 2 lemons to 1 1/4 cups of sugar and rub them together to incorporate the flavors of the lemon to the sugar.
Whisk or beat in 4 eggs and add the juice of the 2 lemons (I had about 1/2c). Add 1/4cup of flour and 1/2 tsp of salt.
Pour the filling mixture over the hot crust and bake for 20-25 minutes or until the top is set and doesn't wiggle.
Remove lemon bars and let them cool COMPLETELY before dusting or cutting.
And then you have extra delicious lemon bars that can be a bit addictive. :3 Yummy!
