So i got home from sports practice, was starving and of course there was nothing good to eat, so as i am the QUEEN of leftovers ( i mean, just give me ingredients and i can make something good!! ) i decided to make yet another left over meal ( i feel like i'm making these a lot :)) Here it is, it's wicked healthy because thats kinda what i like to eat, and i mean you can add ANYTHING you really want!!

Gather your ingredients: I used Green pepper Leftover tomato sauce Leftover black beans (whole) The remains of a lettuce head (the stuff near the base) A half used onion A half used box of mushrooms 1/2 cup of leftover cheddar cheese (shreaded) A half eaten whole wheat wrap (those stupid brothers!!! :p)
Ok, so i put a fry pan on the stove turned it to medium and poured in my black beans, juice and all, let the juice boil off a bit. I added the lettuce (I chopped it) and the onions (cut into small pieces). I let that cook for a bit, about 4 minutes, then i added the leftover tomato sauce and heated it up. I threw in the mushrooms and then added the spices ( i used Mrs. Dash, its got no salt in it-lemon/pepper mix) and some garlic :) I quickly stird the spices in, and added the cheese, make sure you stir the veggies quickly, (You don't wanna burn the cheese) The cheese will melt slightly and you can remove it from the burner.
The consistancy for mine was like a thick gravy, you wanna make sure its NOT to wattery ew. You can let the water boil off or not add all the liquid, the cheese brings it together a bit, if it's still wicked watery you can add a LITTLE BIT of cornstarch. (dont use to much cornstarch, i mean it is pretty nasty stuff) Serve over rice, or on a wrap, or on toast or by itself, or on a ricecake... you get the idea!!
